INGREDIENTS:

  • 1 ripe mangoes, pitted, peeled and roughly chopped
  • 250 g | 1 cup almond milk
  • 63 g | 1/4 cup coconut milk
  • 125 g | 1/2 cup ice cubes (optional)
  • 1/2 tsp vanilla extract
  • dash of ground cardamom

METHOD:

STEP 1: In a blender, combine all ingredients.

Fun fact: The word ‘Chai’ means ‘tea’, so asking for a Chai tea would be pretty much saying, ‘I’ll have a ‘tea tea’ please! If you want to order this tea/chai in a restaurant or in the country itself, you would ask for Masala Chai. 

Ingredients:

  • 480 ml | 16 oz | 2 cups water
  • 1 tsp loose assam tea
  • 2 whole green cardamom pods, smashed
  • 1 whole cinnamon stick, broken
  • 5 whole cloves, smashed
  • 240 ml | 8 oz | 1 cup almond milk
  • To taste, sugar or other sweetener

Method:

STEP 1: Bring water to boil, add loose tea, then reduce the heat to a low simmer (so the milk does not scald).

STEP 2: Add the cardamon, cinnamon, and cloves. Add up to 3 cups of milk (The chai should look milky taupe in colour).

STEP 3: Sweeten the chai with sugar to taste, and stir until dissolved. Pour the chai through a strainer and serve.

Fun fact: The Caesar was invented in 1969 by restaurant manager Walter Chell of the Calgary Inn (Calgary, Canada). He devised the cocktail after being tasked to create a signature drink for the new restaurant. Ingredients:

  • 720 ml | 24 oz | 3 cups tomato/vegetable juice
  • 1 tbsp Dijon mustard
  • 1 tbsp vegan Worcestershire sauce
  • 2 tsp hot sauce, or to taste
  • 4 tbsp fresh lemon juice
  • 3 tbsp fresh lime juice
  • 1/2 tsp celery salt
  • To taste, sprinkle of salt
  • To taste, freshly ground black pepper
  • To garnish, celery salt, lime, celery stalks, ice

Method:

  1. In a pitcher, combine and whisk together the vegetable juice, mustard, Worcester sauce, hot sauce, lemon juice, and lime juice.
  2. Grab a glass and rim the edge with a lime wedge. Now dip glass rim into a shallow bowl of celery salt.
  3. Pour drink into glass and garnish with a lime wedge, celery stalk, and ice. Serve immediately.

Margherita’s Cranberry Mocktail

Ingredients:

  • 180 ml | 3/4 cup 100% cranberry juice
  • 120 ml | 1/2 cup water
  • 125 g | 1/2 cup sugar, or to taste
  • 150 g 1 1/2 cups fresh or thawed cranberries
  • 180 ml | 3/4 cup fresh lime juice (5-6 limes)
  • 120 ml | 1/2 cup orange juice

Method:

  1. Pour the cranberry juice into the blender, reserving 1 tbsp. Sprinkle 3 tbsp sugar onto a small plate. Use the cranberry juice to coat the rims of 4 to 6 glasses (6 to 8 oz each) and then dip the glasses into the sugar. Fill with ice and set aside.
  2. Reserve 12 cranberries and place the rest in the blender along with the water, sugar, lime juice, tequila, and orange liqueur. Blend until smooth.
  3. Pour through a strainer to catch the cranberry pulp. Pour the strained margarita into glasses and garnish with reserved berries.

Sunny Sangria

Ingredients:

1 litre bottle diet lemonade, chilled
1 cup unsweetened white grape juice, chilled
1 cup reduced-calorie cranberry juice
2 cups orange juice, freshly squeezed preferred
1 lemon, sliced
2 limes, sliced
1 orange, sliced
1 can pineapple chunks with juice
1 handful mango chunks, frozen
natural cane sugar, to taste
sparkling water, optional add before serving
ice, optional
mint sprigs

Method:

  1. Add everything except the sugar into a large pitcher and stir well. Add sugar to taste and adjust until your desired sweetness is achieved. Chill in the fridge for at least 2 hours prior to serving.
  2. Before serving, you may add some club soda & ice if desired. Taste again and add more sweetener if necessary.
  3. Fill each of 10 glasses about two-thirds full with ice. Divide fruit among glasses. Pour juice mixture into glasses. Garnish with fresh mint sprigs. Makes 10 (about 6 oz) servings.
